  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup buttermilk
  • For the Rum Buttercream:
  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 2-3 tablespoons dark rum
  • 1 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together flour, cinnamon, baking soda, and salt. Set aside.
  3. In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Pour the batter into the prepared cake pan and spread evenly.
  7. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  9. While the cake cools, prepare the buttercream. In a large bowl, beat softened butter until creamy.
  10. Gradually add powdered sugar, cinnamon, and salt, beating until smooth.
  11. Add the rum, one tablespoon at a time, beating until the frosting reaches your desired consistency and flavor.
  12. Once the cake is completely cool, frost it with the cinnamon rum buttercream.
