  • 3 and 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 and 1/2 cups milk
  • 1 egg
  • 3 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • For the cinnamon swirl:
  • 1/2 cup packed brown sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons softened butter
  • For the glaze:
  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large bowl, sift together the flour, baking powder, salt, and sugar.
  2. Make a well in the center and pour in the milk, egg, and melted butter. Mix until just combined; do not overmix. Stir in the vanilla extract.
  3. In a small bowl, combine the brown sugar and cinnamon for the swirl.
  4. Melt the 2 tablespoons of butter and brush it lightly over the inside of a non-stick skillet or griddle.
  5. Pour about 1/4 cup of batter onto the hot skillet for each pancake.
  6. Immediately sprinkle about 1 teaspoon of the cinnamon-sugar mixture over the raw batter.
  7. Using a toothpick or skewer, gently swirl the cinnamon sugar into the batter.
  8. Cook for about 2-3 minutes per side, or until golden brown and cooked through.
  9. While the pancakes are cooking, whisk together the powdered sugar, 2 tablespoons of milk, and vanilla extract for the glaze. Add more milk if needed to reach your desired drizzling consistency.
  10. Serve the pancakes warm, drizzled with the cinnamon glaze.
