Overnight Cinnamon Roll French Toast Casserole

Make your weekend mornings special with this easy, make-ahead Cinnamon Roll French Toast Casserole. You combine store-bought cinnamon rolls with a rich custard, bake until golden, and top it with the included icing for an indulgent, gooey breakfast treat.

  • 1 (12.5 ounce) package refrigerated cinnamon rolls (about 8 rolls)
  • 6 large eggs
  • 1 1/2 cups whole milk or half and half
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons melted butter
  • Optional: Extra icing from the cinnamon roll package

Instructions

  1. Grease a 9×13 inch baking dish with cooking spray or butter.
  2. Cut each cinnamon roll into quarters. Arrange the pieces evenly in the prepared baking dish.
  3. In a large bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, and ground cinnamon until fully combined. This creates your rich custard base.
  4. Slowly pour the egg mixture evenly over the cut cinnamon rolls in the baking dish, making sure all pieces are coated. Gently press down on the rolls so they absorb the liquid.
  5. Cover the dish tightly with plastic wrap. Refrigerate for at least 4 hours, or preferably overnight, to allow the bread to soak up the custard.
  6. When ready to bake, preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Remove the plastic wrap.
  7. Bake for 30 to 35 minutes, or until the casserole is puffed, golden brown, and the center is set.
  8. Remove the casserole from the oven. If the icing packets came with your rolls, warm them slightly and drizzle the icing over the hot casserole immediately before serving.
  9. Cut into squares and serve this comforting breakfast treat warm.

  • Using brioche bread instead of canned rolls results in a more homemade texture for this baked French toast.
  • For an extra layer of flavor, sprinkle 1/4 cup of chopped pecans over the top before baking.
  • If you prefer a less sweet dish, use only half of the included icing or make a simple glaze using powdered sugar and a splash of milk.
