Whip up these delicious chocolate protein muffins for a healthy and satisfying snack. They’re packed with protein and have a rich chocolate flavor, perfect for a post-workout treat or a guilt-free indulgence.

  • ½ cup unsweetened cocoa powder
  • 1 scoop (approx. 30g) chocolate protein powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup granulated sugar
  • 1 large egg
  • ½ cup unsweetened applesauce
  • ½ cup milk (dairy or non-dairy)
  • ⅓ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a 12-cup muffin tin.
  2. In a large bowl, whisk together the flour, cocoa powder, protein powder, baking soda, baking powder, and salt.
  3. In a separate medium bowl, whisk together the sugar, egg, applesauce, milk, vegetable oil, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Gently fold in the chocolate chips, if using.
  6. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a richer chocolate flavor, use dark cocoa powder.
  • Adjust the sweetness by using less or more sugar, or by adding a sugar substitute.
  • Ensure your protein powder is suitable for baking, as some can alter texture.
