1 cup fresh strawberries, hulled and sliced
1/2 cup pomegranate arils
8 ounces semi-sweet chocolate chips
1 teaspoon coconut oil (optional, for smoother melting)
Instructions
Prepare your strawberries by hulling and slicing them.
Gently separate the pomegranate arils.
Melt the chocolate chips. You can do this in a microwave-safe bowl in 30-second intervals, stirring between each, or use a double boiler. Add coconut oil if desired for a smoother consistency.
Dip each strawberry slice into the melted chocolate, coating about half to two-thirds of the slice.
Immediately sprinkle some pomegranate arils over the chocolate-coated part of the strawberry slice.
Place the coated strawberry slices on a baking sheet lined with parchment paper.
Refrigerate for at least 15-20 minutes, or until the chocolate is firm.
