Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth.
  3. Whisk in the eggs one at a time until fully combined, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed or by hand until just combined. Do not overmix.
  6. Fold in the chopped semi-sweet chocolate and the extra chocolate chips.
  7. Scoop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each mound.
  8. Bake for 10 to 13 minutes. The edges should look set, but the centers will still look slightly soft and shiny. This ensures a fudgy texture.
  9. Immediately sprinkle a tiny pinch of flaky sea salt over the tops of the cookies, if using.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. They will firm up as they cool.
