1.5 lbs salmon fillet
2 tablespoons olive oil
1 tablespoon chipotle powder
1 teaspoon cumin
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup lime juice
12 corn tortillas
For the slaw:
2 cups shredded cabbage
1/2 cup chopped cilantro
1/4 cup mayonnaise
2 tablespoons lime juice
1 tablespoon adobo sauce from canned chipotle peppers
Salt to taste
Optional toppings: avocado, sour cream, pickled red onions
Instructions
Preheat your oven to 400°F (200°C).
In a small bowl, mix together olive oil, chipotle powder, cumin, garlic powder, salt, and pepper.
Place the salmon fillet on a baking sheet lined with parchment paper. Brush the spice mixture evenly over the salmon.
Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
While the salmon is baking, prepare the slaw. In a medium bowl, combine shredded cabbage, cilantro, mayonnaise, lime juice, and adobo sauce. Mix well and season with salt to taste.
Once the salmon is cooked, flake it into pieces using a fork.
Warm the corn tortillas according to package directions.
Assemble the tacos by layering flaked salmon, the prepared slaw, and your favorite optional toppings onto the warm tortillas.
Drizzle with extra lime juice if desired.
Notes
For an extra smoky flavor, you can grill the salmon instead of baking it.
Adjust the chipotle powder to your spice preference.
The slaw can be made ahead of time and stored in the refrigerator.
