1 pound boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
1/2 cup cornstarch
1/4 teaspoon salt
1/8 teaspoon black pepper
2 tablespoons vegetable oil
1/2 cup honey
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 clove garlic, minced
1/2 teaspoon grated fresh ginger
Green onions, sliced, for garnish
Sesame seeds, for garnish
Instructions
In a medium bowl, toss chicken pieces with cornstarch, salt, and pepper until coated.
Heat vegetable oil in a large skillet or wok over medium-high heat.
Add chicken to the skillet in a single layer. Cook for 3-5 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
In a small bowl, whisk together honey, soy sauce, rice vinegar, sesame oil, minced garlic, and grated ginger.
Pour the sauce into the same skillet. Bring to a simmer, stirring constantly, until the sauce thickens slightly, about 2-3 minutes.
Return cooked chicken to the skillet. Toss to coat evenly with the honey sauce.
Serve immediately over rice. Garnish with sliced green onions and sesame seeds.

For extra crispiness, double fry the chicken.
