  • 1 teaspoon ground cumin

  • 6 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 2 cups shredded cooked chicken
  • Salt and freshly ground black pepper to taste
  • For Garnish: tortilla chips, shredded cheese, sour cream, chopped cilantro, diced avocado

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5-7 minutes.
  2. Add garlic, chili powder, cumin, oregano, and cayenne pepper (if using). Cook for 1 minute more until fragrant.
  3. Pour in the chicken broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Stir in the black beans, pinto beans, and shredded chicken. Heat through for about 5 minutes.
  5. Season with salt and pepper to taste.
