12 ounces spaghetti or linguine
2 tablespoons butter
1/2 cup chopped onion
1/2 cup sliced mushrooms
1/4 cup all-purpose flour
2 cups chicken broth
1 cup half-and-half or milk
1/2 cup dry sherry (optional)
1 teaspoon salt
1/4 teaspoon black pepper
2 cups cooked, shredded chicken
1/2 cup pimentos, chopped
1/2 cup grated Parmesan cheese, plus more for topping
1 cup shredded mozzarella cheese
1/2 cup breadcrumbs
Instructions
Preheat your oven to 375 degrees F. Lightly grease a 9×13 inch baking dish.
Cook the pasta according to package directions until al dente. Drain well and set aside.
Melt the butter in a large saucepan over medium heat. Add the onion and mushrooms. Cook until soft, about 5 minutes.
Stir in the flour and cook for 1 minute. Slowly whisk in the chicken broth until smooth.
Add the half-and-half, sherry (if using), salt, and pepper. Bring the mixture to a simmer, stirring constantly until it thickens, about 5 to 7 minutes.
Remove the sauce from the heat. Stir in the cooked chicken, pimentos, Parmesan cheese, and mozzarella cheese.
Fold the cooked pasta into the sauce mixture. Spread the mixture evenly into the prepared baking dish.
In a small bowl, combine the extra Parmesan cheese and breadcrumbs. Sprinkle this topping evenly over the casserole.
