Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken thighs
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp paprika
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp garlic powder
  • 1/2 tsp turmeric
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne pepper
  • Salt and black pepper to taste
  • 4-6 pita breads
  • 1 cup shredded lettuce
  • 1/2 cup chopped tomatoes
  • 1/2 cup chopped cucumber
  • 1/4 cup chopped red onion
  • Garlic Sauce (Toum)

Instructions

  1. Cut chicken thighs into bite-sized pieces.
  2. In a bowl, combine olive oil, lemon juice, paprika, cumin, coriander, garlic powder, turmeric, cinnamon, cayenne pepper, salt, and pepper.
  3. Add chicken pieces to the marinade and toss to coat. Let it marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  4. Cook the marinated chicken in a hot skillet or grill until cooked through and slightly charred.
  5. Warm the pita breads.
  6. Assemble the wraps: spread garlic sauce on the pita, add cooked chicken, lettuce, tomatoes, cucumber, and red onion.
  7. Fold or roll the pita to serve.

Notes

  • For a spicier kick, add more cayenne pepper to the marinade.
  • You can substitute chicken breast for thighs, but thighs tend to stay more moist.
  • Homemade or store-bought garlic sauce works well.
  • Feel free to add other vegetables like bell peppers or parsley.
