  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 12 ounces pasta (penne or rotini work well)
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 2 cups fresh spinach
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the sliced chicken sausage and cook until browned on both sides, about 5 to 7 minutes. Remove the sausage with a slotted spoon and set it aside, leaving any rendered fat in the skillet.
  2. Add the chopped onion to the skillet and cook until softened, about 3 minutes. Add the minced garlic, sun-dried tomatoes, Italian seasoning, oregano, and red pepper flakes (if using). Cook for 1 minute until fragrant.
  3. Pour in the chicken broth and bring the mixture to a simmer. Add the dry pasta to the skillet, stirring to coat. Cover the skillet and cook according to the pasta package directions, usually 10 to 12 minutes, stirring occasionally to prevent sticking.
  4. Once the pasta is nearly tender, reduce the heat to medium-low. Stir in the heavy cream and the cooked chicken sausage. Let it simmer gently for 2 minutes.
  5. Stir in the Parmesan cheese until the sauce is smooth and creamy. Add the fresh spinach and stir until it wilts into the sauce, about 1 minute.
