  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups breadcrumbs (Panko recommended)
  • 1/2 cup grated Parmesan cheese (for breading)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/2 cup olive oil (for frying)
  • 2 cups marinara sauce (your favorite recipe or store-bought)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese (for topping)
  • 1 pound spaghetti

Instructions

  1. Prepare the chicken: Pound the chicken breasts to about 1/2 inch thickness. Season both sides lightly with salt and pepper.
  2. Set up your breading station: Place flour in one shallow dish. Whisk eggs in a second dish. Combine breadcrumbs, 1/2 cup Parmesan, oregano, and garlic powder in a third dish.
  3. Dredge each chicken cutlet first in flour, shaking off excess. Dip it into the egg mixture. Finally, press firmly into the breadcrumb mixture to coat completely.
  4. Heat the olive oil in a large skillet over medium-high heat. Carefully place the cutlets in the hot oil. Fry for 3 to 4 minutes per side until golden brown and cooked through. You may need to do this in batches.
  5. Preheat your broiler. Place the fried chicken cutlets in an oven-safe dish. Spoon marinara sauce over each cutlet. Top generously with mozzarella and the remaining 1/2 cup of Parmesan cheese.
  6. Broil for 2 to 4 minutes, watching closely, until the cheese is melted and bubbly brown.
  7. While the chicken broils, cook the spaghetti according to package directions until al dente. Drain well.
  8. Serve one chicken parmesan cutlet over a generous portion of spaghetti. Spoon extra sauce over the pasta if you like. Enjoy your flavorful meal!
