  • 1.5 lbs boneless, skinless chicken breasts, cut into thin strips
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 2 bell peppers (any color), sliced
  • 1 large onion, sliced
  • 1 tablespoon lime juice
  • Flour tortillas, for serving
  • Optional toppings: salsa, sour cream, guacamole, shredded cheese

Instructions

  1. In a bowl, combine chicken strips with olive oil, chili powder, cumin, paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper. Toss to coat evenly.
  2. Heat a large skillet or cast-iron pan over medium-high heat.
  3. Add the marinated chicken to the hot skillet in a single layer. Cook for 3-4 minutes per side, until browned and cooked through. Remove chicken from skillet and set aside.
  4. Add the sliced bell peppers and onions to the same skillet. Cook, stirring occasionally, for 5-7 minutes, or until softened and slightly caramelized.
  5. Return the cooked chicken to the skillet with the vegetables.
  6. Add the lime juice and stir everything together. Cook for another 1-2 minutes to heat through.
  7. Warm the flour tortillas according to package directions.
  8. Serve the chicken and vegetable mixture in the warm tortillas. Add your favorite toppings.

Notes

  • For extra flavor, marinate the chicken for at least 30 minutes or up to 4 hours in the refrigerator.
  • You can use chicken thighs instead of breasts for a more tender result.
  • Adjust the amount of cayenne pepper to control the spice level.
