A simple, creamy casserole featuring chicken and broccoli baked until bubbly. This recipe uses a homemade sauce for a comforting, classic flavor.

  • 2 cups cooked, shredded chicken (rotisserie chicken works well)
  • 4 cups fresh broccoli florets
  • 1 tablespoon butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/2 cup chicken broth
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
  2. Blanch the broccoli florets in boiling water for 3 minutes until bright green and slightly tender. Drain them well.
  3. In a medium saucepan, melt the butter over medium heat. Whisk in the flour until a smooth paste forms, cooking for one minute.
  4. Gradually whisk in the milk and chicken broth until the mixture thickens into a smooth sauce.
  5. Stir in the salt, pepper, and onion powder. Remove the pan from the heat.
  6. Stir in the shredded cheddar cheese until it melts completely into the sauce.
  7. In a large bowl, combine the shredded chicken, blanched broccoli, and the cheese sauce. Mix gently to coat everything evenly.
  8. Pour the mixture into the prepared baking dish.
  9. If using, sprinkle the breadcrumbs evenly over the top.
  10. Bake for 25 to 30 minutes, or until the casserole is hot throughout and the top is lightly golden brown.
  11. Let the casserole rest for 5 minutes before you serve it.

Notes

  • For a richer flavor, you can substitute half of the milk with heavy cream.
  • If you prefer a thinner sauce, add an extra 1/4 cup of chicken broth.
  • You can assemble this dish completely ahead of time and refrigerate it for up to 24 hours before baking. Add 10 minutes to the bake time if cooking directly from the refrigerator.
