  • 1 pound boneless, skinless chicken breasts
  • 1 head romaine lettuce, chopped
  • 1/2 cup croutons
  • 1/4 cup grated Parmesan cheese
  • For the Dressing:
  • 2 egg yolks
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1/4 cup lemon juice
  • 1/2 cup olive oil
  • Salt and black pepper to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Season chicken breasts with salt and pepper. Grill for 6-8 minutes per side, or until cooked through. Let rest, then slice.
  3. While the chicken grills, prepare the dressing. In a bowl, whisk together egg yolks, minced garlic, Dijon mustard, and lemon juice.
  4. Slowly drizzle in olive oil while whisking continuously until the dressing emulsifies and thickens. Season with salt and pepper.
  5. In a large bowl, combine chopped romaine lettuce, croutons, and sliced grilled chicken.
  6. Add the dressing and toss gently to coat all ingredients.
  7. Top with grated Parmesan cheese before serving.

Notes

  • For a richer dressing, add a splash of Worcestershire sauce.
  • Ensure chicken is cooked to an internal temperature of 165°F (74°C).
