  • 1.5 lbs boneless, skinless chicken thighs
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 tablespoon olive oil
  • 1 cup white rice, cooked
  • 1 cup black beans, rinsed and drained
  • 1/2 cup corn, drained
  • 1/4 cup chopped cilantro
  • 1/4 cup salsa
  • Sour cream or Greek yogurt
  • Shredded cheese
  • Guacamole or avocado slices
  • Shredded lettuce

Instructions

  1. Season the chicken thighs with chili powder, cumin, smoked paprika, garlic powder, onion powder, and cayenne pepper (if using).
  2. Heat olive oil in a skillet over medium-high heat.
  3. Add the seasoned chicken to the skillet and cook for 6-8 minutes per side, or until cooked through and nicely browned.
  4. Remove chicken from skillet and let it rest for a few minutes.
  5. Dice the cooked chicken into bite-sized pieces.
  6. Assemble your burrito bowls: start with a base of cooked white rice.
  7. Top with the diced chicken, black beans, corn, cilantro, salsa, sour cream, cheese, guacamole, and lettuce.
  8. Serve immediately and enjoy!
