  • 4 cups sliced yellow squash (about 2 medium)

  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • 1/4 cup breadcrumbs
  • 2 tablespoons butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Add the sliced squash to the skillet. Season with salt, pepper, and nutmeg. Cook, stirring occasionally, until the squash is tender-crisp, about 8-10 minutes.
  4. Remove the skillet from the heat. Stir in the shredded cheddar cheese, Monterey Jack cheese, and half of the Parmesan cheese until the cheeses are melted and well combined with the squash mixture.
  5. Pour the squash and cheese mixture into the prepared baking dish.
  6. In a small bowl, combine the breadcrumbs, melted butter, and the remaining Parmesan cheese. Sprinkle this mixture evenly over the top of the casserole.
