2 lbs yellow squash, sliced
1/2 cup chopped onion
1 can (10.75 oz) cream of chicken soup
1/2 cup milk
1 cup shredded cheddar cheese, plus more for topping
1/2 cup grated Parmesan cheese
1/2 cup crushed butter crackers (like Ritz)
1/4 cup melted butter
Salt and black pepper to taste
Instructions
Preheat oven to 375°F (190°C).
In a large pot, bring lightly salted water to a boil. Add sliced squash and chopped onion. Cook until tender-crisp, about 5-7 minutes. Drain well.
In a large bowl, combine the drained squash and onion with cream of chicken soup, milk, 1 cup cheddar cheese, and Parmesan cheese. Mix well to combine.
Season with salt and black pepper to taste.
Pour the mixture into a 9×13 inch baking dish.
In a small bowl, combine crushed crackers and melted butter. Sprinkle this mixture evenly over the top of the casserole.
Sprinkle additional shredded cheddar cheese over the cracker topping.
Bake for 25-30 minutes, or until bubbly and the topping is golden brown.
Let stand for 5 minutes before serving.
Notes
You can use a mix of yellow squash and zucchini for variation.
For a richer flavor, use heavy cream instead of milk.
Add a pinch of garlic powder or onion powder to the squash mixture for extra depth.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
