Cheesy Spinach Artichoke Dip

  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 (14 ounce) can artichoke hearts, drained and roughly chopped
  • 8 ounces cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 cup shredded Parmesan cheese, divided
  • 1 cup shredded Monterey Jack cheese, divided
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the softened cream cheese, mayonnaise, and sour cream. Mix until smooth.
  3. Stir in the thawed and squeezed spinach, chopped artichoke hearts, minced garlic, half of the Parmesan cheese, and half of the Monterey Jack cheese.
  4. Season with salt and pepper to your liking.
  5. Pour the mixture into a medium-sized baking dish.
  6. Top with the remaining Parmesan and Monterey Jack cheeses.
  7. Bake for 20-25 minutes, or until the dip is hot, bubbly, and the cheese on top is golden brown.
