  • 1 cup shredded Monterey Jack cheese (or your favorite melting cheese)
  • 1/4 cup salsa verde (plus more for serving)
  • 8 small flour tortillas (6 inch)
  • Cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly coat a baking sheet with cooking spray.
  2. In a medium bowl, combine the shredded chicken, cheese, and 1/4 cup of salsa verde. Mix well until everything is evenly distributed.
  3. Warm the tortillas briefly in the microwave or a dry skillet until they are soft and pliable. This prevents cracking when rolling.
