1 cup cooked, shredded chicken
1 cup shredded Monterey Jack cheese (or your favorite melting cheese)
1/4 cup salsa verde (plus more for serving)
8 small flour tortillas (6 inch)

Instructions
Preheat your oven to 400°F (200°C). Lightly coat a baking sheet with cooking spray.
In a medium bowl, combine the shredded chicken, cheese, and 1/4 cup of salsa verde. Mix well until everything is evenly distributed.
Warm the tortillas briefly in the microwave or a dry skillet until they are soft and pliable. This prevents cracking when rolling.
Spoon about 2 tablespoons of the chicken mixture into the center of each tortilla.
Tightly roll up each tortilla. Place them seam-side down on the prepared baking sheet.
Lightly spray the tops of the rolled taquitos with cooking spray.

Notes
You can use rotisserie chicken to save prep time.
