This Cheesy Chicken Alfredo Casserole is an easy and comforting baked dish perfect for a family dinner. It combines tender chicken, pasta, and a rich, creamy Alfredo sauce topped with melted cheese. It’s a delightful meal that brings everyone to the table.

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 12 ounces fettuccine pasta
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese, for topping
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook fettuccine according to package directions. Drain and set aside.
  3. While the pasta cooks, season the chicken breasts with salt and pepper.
  4. Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken and cook for 6-8 minutes per side, until cooked through and no longer pink inside. Remove chicken from the skillet and let it rest for a few minutes.
  5. Once cooled, shred or dice the chicken.
  6. In the same skillet, melt the butter over medium heat. Add minced garlic and cook for about 1 minute until fragrant, being careful not to burn it.
  7. Pour in the heavy cream and bring it to a simmer. Stir in 1 cup of Parmesan cheese and 1/2 cup of mozzarella cheese until the cheeses are melted and the sauce is smooth and creamy.
  8. Add the cooked fettuccine and the shredded or diced chicken to the skillet with the Alfredo sauce. Toss gently to combine everything.
  9. Sprinkle the remaining 1/4 cup of Parmesan cheese over the top.
  10. Bake for 15-20 minutes, or until the casserole is bubbly and the cheese on top is golden brown.
  11. Garnish with fresh parsley, if desired, before serving.

  • You can use rotisserie chicken for a quicker preparation.
  • Feel free to add steamed broccoli or peas for extra vegetables.
