  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can red enchilada sauce, divided
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 (8-inch) flour tortillas
  • 2 cups shredded cheddar cheese, divided

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a 9×13 inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add ground beef and onion; cook until beef is browned and onion is soft. Drain off any excess fat.
  3. Stir in the rinsed black beans, 1/2 cup of the enchilada sauce, chili powder, cumin, and garlic powder into the beef mixture. Season with salt and pepper. Cook for 2 minutes until heated through.
  4. Pour about 1/4 cup of the remaining enchilada sauce into the bottom of the prepared baking dish, spreading it around.
  5. Spoon about 1/4 cup of the beef and bean mixture down the center of each flour tortilla. Sprinkle a small amount of cheese over the filling.
  6. Roll up the tortillas tightly and place them seam-side down in the prepared baking dish.
  7. Pour the remaining enchilada sauce evenly over the rolled tortillas.
  8. Sprinkle the remaining shredded cheese over the top.
  9. Bake for 20 to 25 minutes, or until the sauce is bubbly and the cheese is melted and lightly browned. Let stand for 5 minutes before serving.

Notes

  • For extra flavor, warm your tortillas slightly before rolling; this helps prevent tearing.
  • You can substitute Monterey Jack cheese for part of the cheddar for a different melt.
  • Serve with sour cream, salsa, or sliced avocado for topping.
