  • 1 tablespoon olive oil
  • 1/2 cup milk
  • 4 tablespoons unsalted butter
  • 1 cup shredded sharp cheddar cheese, plus extra for topping
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh chives
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Rub the potatoes with olive oil and sprinkle with a little salt.
  2. Bake the potatoes directly on the oven rack for 50 to 60 minutes, or until the skins are crisp and the insides are tender. Let them cool slightly.
  3. Reduce the oven temperature to 375°F (190°C).
  4. Carefully slice each potato in half lengthwise. Scoop out the flesh into a bowl, leaving about a 1/4-inch shell intact.
  5. Add the milk, butter, 1 cup of cheddar cheese, sour cream, chives, salt, and pepper to the potato flesh.
  6. Mash the mixture thoroughly until it is smooth and creamy.
  7. Spoon the filling back into the potato shells, mounding it slightly.
  8. Place the filled potatoes on a baking sheet. Top each with a sprinkle of extra cheddar cheese.
  9. Bake for 15 to 20 minutes, until the cheese is melted and bubbly and the filling is heated through.
  10. Serve these warm, party-ready bites immediately.
