Charred Mexican street corn

Learn how to achieve a delicious charred, smoky flavor on your Mexican street corn using direct flame or broiler techniques. This recipe is perfect for adding that authentic street food taste to your meals.

Ingredients

Scale
  • 4 ears of corn, husked
  • 1/4 cup mayonnaise
  • 2 tablespoons cotija cheese, crumbled
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • Pinch of cayenne pepper (optional)
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Prepare your heat source. You can use a gas grill on high heat, a charcoal grill, or your oven broiler.
  2. If using a grill, place the corn directly over the high heat. Turn the corn frequently to char all sides evenly. This should take about 8-10 minutes.
  3. If using a broiler, place the corn on a baking sheet and position it about 4-6 inches from the heat source. Broil for 4-5 minutes per side, turning often, until charred. Watch carefully to prevent burning.
  4. While the corn is charring, mix together the mayonnaise, crumbled cotija cheese, lime juice, chili powder, and cayenne pepper (if using) in a small bowl.
  5. Once the corn is charred to your liking, remove it from the heat.
  6. Brush the charred corn generously with the mayonnaise mixture.
  7. Garnish with fresh chopped cilantro.
  8. Serve immediately and enjoy your charred Mexican street corn!

Notes

  • For extra smoky flavor, consider using a charcoal grill.
  • Adjust chili powder and cayenne pepper to your spice preference.
  • If you don’t have cotija cheese, feta can be used as a substitute.
