1 large onion, finely chopped
2 cloves garlic, minced
1 tablespoon grated fresh ginger
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon turmeric powder
1/4 teaspoon cayenne pepper (or to taste)
1 (14.5 ounce) can diced tomatoes, undrained
1 (15 ounce) can chickpeas, drained and rinsed
1 cup vegetable broth
1/2 teaspoon garam masala
Salt and black pepper to taste
Fresh cilantro, chopped, for garnish
Instructions
Heat the vegetable oil in a large pot or Dutch oven over medium heat.
Add the chopped onion and cook until softened and translucent, about 5-7 minutes.
Stir in the minced garlic and grated ginger, and cook for another minute until fragrant.
Add the cumin, coriander, turmeric, and cayenne pepper. Stir well and cook for 30 seconds until the spices are fragrant.
Pour in the diced tomatoes with their juice. Bring to a simmer and cook for 5 minutes, stirring occasionally.
Add the drained and rinsed chickpeas and the vegetable broth. Stir to combine.
Bring the curry to a simmer, then reduce the heat to low, cover, and cook for at least 20 minutes, allowing the flavors to meld.
Stir in the garam masala. Season with salt and black pepper to taste.
Serve hot, garnished with fresh cilantro.
Notes
For a creamier texture, you can mash some of the chickpeas against the side of the pot.
Adjust the cayenne pepper to your preferred spice level.
This curry is delicious served with basmati rice or naan bread.
