1 tablespoon olive oil
1 cup chopped onion
2 cloves garlic, minced
1 cup chopped carrots
1 cup frozen peas
1 cup riced cauliflower
2 tablespoons soy sauce
1 teaspoon sesame oil
2 large eggs, lightly beaten
Instructions
Heat olive oil in a large skillet or wok over medium-high heat.
Add chopped onion and cook until softened, about 3-5 minutes.
Add minced garlic and cook for 1 minute more until fragrant.
Stir in chopped carrots and frozen peas. Cook for 5-7 minutes until vegetables are tender-crisp.
Add the riced cauliflower to the skillet. Stir and cook for 5-7 minutes until the cauliflower is tender but not mushy.
Push the cauliflower and vegetables to one side of the skillet. Pour the beaten eggs onto the empty side and scramble them until cooked through.
Stir the scrambled eggs into the cauliflower mixture.
Drizzle with soy sauce and sesame oil. Toss everything together to combine.
Serve hot and enjoy your healthy fried rice!

You can add other vegetables like broccoli florets or bell peppers.
For a spicier kick, add a pinch of red pepper flakes.
