Cauliflower Fried Rice Bowl

Ingredients

  • 2 cups cauliflower florets, riced
  • 1 tbsp olive oil
  • 1/2 cup diced onion
  • 1/2 cup diced carrot
  • 1/2 cup frozen peas
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 egg, lightly beaten (optional)
  • 1/4 cup chopped scallions
  • 1 tbsp sesame seeds

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add diced onion and carrot, and stir-fry for 3-4 minutes until tender-crisp.
  3. Add the riced cauliflower and frozen peas, and cook for another 5-7 minutes, stirring occasionally, until the cauliflower is tender.
  4. Push the vegetables to one side of the skillet. If using, pour the beaten egg into the empty space and scramble until cooked through.
  5. Add minced garlic, soy sauce, and sesame oil to the skillet. Stir everything together to combine and cook for 1-2 minutes until fragrant.
  6. Serve the cauliflower fried rice in bowls, topped with chopped scallions and sesame seeds.

Notes

  • For a vegan option, omit the egg.
  • Add your favorite protein like tofu or chicken.
  • Adjust soy sauce to your taste.
