This carbonara ramen recipe combines the creamy richness of Italian carbonara with the comforting slurp of ramen noodles. It is a quick and easy fusion dish featuring a silky egg and cheese sauce, crispy bacon, and savory Parmesan.

  • 8 ounces ramen noodles (2 blocks, discard seasoning packets)
  • 4 slices bacon, cut into 1/2-inch pieces
  • 2 large egg yolks
  • 1 whole large egg
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1/4 teaspoon black pepper, freshly ground
  • Salt to taste
  • Chopped fresh chives or green onions, for garnish (optional)

Instructions

  1. Cook ramen noodles according to package directions until al dente. Drain, reserving 1/2 cup of the cooking water.
  2. While noodles cook, heat a large skillet or wok over medium heat. Add bacon pieces and cook until crispy. Remove bacon with a slotted spoon, leaving rendered fat in the skillet. Set bacon aside.
  3. In a medium bowl, whisk together egg yolks, whole egg, Parmesan cheese, and black pepper until well combined and creamy.
  4. Add the drained ramen noodles to the skillet with the bacon fat. Toss gently to coat.
  5. Pour the egg mixture over the noodles, stirring constantly and quickly. Add 2-3 tablespoons of the reserved pasta water, one tablespoon at a time, continuing to stir until the sauce is creamy and coats the noodles. If the sauce is too thick, add more reserved water, a tablespoon at a time, until desired consistency is reached.
  6. Stir in the cooked bacon. Taste and add salt if needed.
  7. Serve immediately, garnished with extra Parmesan cheese and fresh chives or green onions, if using.

  • Use good quality Parmesan cheese for the best flavor.
  • The key to a creamy carbonara is to work quickly and continuously stir the sauce over the warm noodles off the heat to prevent the eggs from scrambling.
