Ingredients
Scale
1 pound fresh green beans, trimmed
2 tablespoons butter
2 large yellow onions, thinly sliced
1/2 teaspoon salt, plus more to taste
1/4 teaspoon black pepper, plus more to taste
1 (10.5 ounce) can condensed cream of mushroom soup
1/2 cup milk
1/4 cup fried onions (from a can)
Instructions
Preheat your oven to 375°F (190°C).
Cook the green beans: Blanch the green beans in boiling water for 5-7 minutes until tender-crisp. Drain and set aside.
Caramelize the onions: In a large skillet, melt the butter over medium heat. Add the sliced onions, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Cook, stirring occasionally, for 25-30 minutes, or until the onions are deeply golden brown and tender.
Combine casserole ingredients: In a large bowl, mix the cream of mushroom soup and milk. Stir in the cooked green beans and the caramelized onions.
Assemble and bake: Pour the mixture into a 9×13 inch baking dish. Sprinkle the fried onions evenly over the top.
Bake for 20-25 minutes, or until the casserole is heated through and the topping is golden brown.
Serve hot and enjoy your delicious, upgraded green bean casserole!
Notes
For an extra rich flavor, you can add a splash of balsamic vinegar to the onions during the last 5 minutes of caramelizing.
Feel free to add your favorite seasonings like garlic powder or a pinch of nutmeg to the soup mixture.
