1/2 cup butter
1 cup packed brown sugar
1/2 cup light corn syrup
1 teaspoon vanilla extract
1/4 teaspoon salt
6 cups Chex cereal (such as Rice, Corn, or Chocolate)
1 cup chopped pecans or walnuts
1/2 cup dried apple pieces
Instructions
Preheat your oven to 250°F (120°C). Line a baking sheet with parchment paper.
In a medium saucepan, melt the butter over medium heat.
Stir in the brown sugar and light corn syrup. Bring the mixture to a boil, stirring constantly.
Boil for 5 minutes without stirring.
Remove from heat and stir in the vanilla extract and salt.
In a large bowl, combine the Chex cereal and chopped nuts.
Pour the caramel mixture over the cereal and nut mixture. Stir gently until everything is evenly coated.
Fold in the dried apple pieces.
Spread the mixture in a single layer on the prepared baking sheet.
Bake for 45 minutes, stirring every 15 minutes to ensure even toasting and coating.
Let the mix cool completely on the baking sheet. It will become crunchy as it cools.
Break apart any large clumps before serving.
Notes
You can use any combination of Chex cereal you like.
For an extra festive touch, add some festive sprinkles after the mix has cooled slightly.
Store in an airtight container at room temperature for up to a week.
