Cajun Shrimp and Sausage Pasta

  • 1 pound shrimp, peeled and deveined
  • 1 pound smoked sausage, sliced
  • 1 pound pasta (fettuccine or penne work well)
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 bell peppers (any color), chopped
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup chicken broth
  • 2 tablespoons Cajun seasoning
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet or Dutch oven over medium heat. Add sausage and cook until browned. Remove sausage and set aside.
  3. Add onion, bell peppers, and celery to the skillet. Cook until softened, about 5-7 minutes.
  4. Stir in minced garlic and cook for 1 minute until fragrant.
  5. Add diced tomatoes, chicken broth, and Cajun seasoning. Bring to a simmer and cook for 10 minutes, allowing flavors to meld.
  6. Stir in heavy cream and cooked sausage. Bring back to a gentle simmer.
