1 large butternut squash, peeled, seeded, and diced (about 6 cups)
2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, minced
1/2 cup vegetable broth
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
1/2 teaspoon dried thyme
Salt and black pepper to taste
1/2 cup breadcrumbs
2 tablespoons melted butter
Instructions
Preheat your oven to 375°F (190°C).
Toss the diced butternut squash with 1 tablespoon of olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, or until tender.
While the squash roasts, heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
Stir in the minced garlic and cook for another minute until fragrant.
Pour in the vegetable broth and heavy cream. Bring to a simmer, then reduce heat and stir in the Parmesan cheese and thyme. Season with salt and pepper.
Once the squash is roasted, add it to the skillet with the cream mixture. Stir gently to combine.
Transfer the squash mixture to a 9×13 inch baking dish.
In a small bowl, combine the breadcrumbs and melted butter. Sprinkle evenly over the top of the casserole.
Bake for 20-25 minutes, or until the topping is golden brown and the casserole is bubbly.
Let rest for a few minutes before serving.
Notes
You can prepare the squash and sauce ahead of time and assemble the casserole just before baking.
For a richer flavor, roast the butternut squash with a touch of maple syrup.
Consider adding a pinch of nutmeg to the cream sauce to complement the squash.
