  • 2 teaspoons baking powder
  • 1 teaspoon baking soda

  • 2 large eggs, separated
  • 1 3/4 cups buttermilk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your waffle iron according to manufacturer instructions.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate medium bowl, whisk together the egg yolks, buttermilk, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix.
  5. In a clean bowl, beat the egg whites until stiff peaks form.
  6. Gently fold the beaten egg whites into the waffle batter until no white streaks remain.
  7. Pour about 1/2 cup of batter onto the preheated waffle iron for each waffle.
  8. Cook until golden brown and crispy, about 3-5 minutes, depending on your waffle iron.
  9. Serve immediately with your favorite toppings.

Notes

  • For extra crispy waffles, ensure your waffle iron is hot.
  • Do not overmix the batter, as this can result in tough waffles.
  • You can keep cooked waffles warm in a single layer on a baking sheet in a low oven (around 200°F or 90°C) while you cook the remaining batter.
