Butter Swim Biscuits with Melted Butter

Make soft, rich biscuits by baking them close together and pouring melted butter over them during baking for extra moisture.

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup (1 stick) cold unsalted butter, cut into small pieces
  • 3/4 cup cold buttermilk
  • 1/2 cup (1 stick) unsalted butter, melted, for pouring

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit. Lightly grease a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, baking powder, salt, and baking soda.
  3. Cut the cold butter pieces into the dry ingredients using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Pour in the cold buttermilk. Stir gently with a fork until just combined. Do not overmix; the dough will be shaggy.
  5. Turn the dough out onto a lightly floured surface. Gently pat the dough into a rectangle about 3/4 inch thick.
  6. Cut the dough into 12 squares or use a round biscuit cutter. Place the biscuits close together in the prepared baking pan. They should touch slightly.
  7. Pour the 1/2 cup of melted butter evenly over the tops of the biscuits.
  8. Bake for 15 to 18 minutes, or until the tops are golden brown and the biscuits are cooked through.
  9. Remove from the oven and let cool in the pan for 5 minutes before serving warm.

Notes

  • For the softest sides, ensure the biscuits are touching when you place them in the pan before the butter bath.
  • Use cold ingredients, especially the butter and buttermilk, for the best rise and texture.
  • If you prefer a slightly sweeter biscuit, add 1 tablespoon of sugar to the dry ingredients.
