  • 1/2 cup shredded carrots
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup slivered almonds, toasted
  • For the Dressing:
  • 1/4 cup smooth almond butter
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons water (or more for desired consistency)
  • 1 tablespoon maple syrup or honey
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon sesame oil
  • 1 small clove garlic, minced

Instructions

  1. Prepare the dressing: In a small bowl, whisk together the almond butter, apple cider vinegar, water, maple syrup, soy sauce, sesame oil, and minced garlic until smooth. Add more water if you need a thinner consistency.
  2. In a large bowl, combine the broccoli slaw mix, shredded carrots, red onion, and cilantro.
  3. Pour the almond butter dressing over the salad ingredients.
  4. Toss gently until all the vegetables are evenly coated with the dressing.
  5. Sprinkle the toasted slivered almonds over the top just before serving.
