  • 1 pound broccoli florets

  • 1/2 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup breadcrumbs (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  3. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Add the broccoli florets and cubed butternut squash to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables are slightly tender.
  5. In a separate bowl, whisk together the milk and heavy cream.
  6. Stir in the shredded cheddar cheese, salt, and pepper until the cheese is melted and the sauce is smooth.
  7. Pour the cheese sauce over the vegetables in the skillet and stir to combine.
  8. Transfer the mixture to a baking dish.
  9. If using, sprinkle breadcrumbs evenly over the top.
