  • 1 tablespoon olive oil
  • 1 pound bacon, chopped
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 4 cups chicken broth
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped bacon and cook until crispy. Remove bacon with a slotted spoon and set aside on a paper towel-lined plate, leaving about 2 tablespoons of bacon fat in the pot.
  2. Add chopped onion to the pot and cook until softened, about 5-7 minutes. Add minced garlic and cook for 1 minute more until fragrant.
  3. Stir in broccoli florets and chicken broth. Bring to a boil, then reduce heat and simmer for 10-15 minutes, or until broccoli is tender.
  4. Carefully transfer the soup to a blender (in batches if necessary) or use an immersion blender to puree until smooth.
  5. Return the pureed soup to the pot. Stir in milk, salt, and pepper. Heat gently over medium-low heat, but do not boil.
  6. Gradually stir in shredded cheddar cheese until melted and the soup is creamy.
  7. Serve hot, topped with the reserved crispy bacon.

Notes

  • For a thicker soup, use less milk or add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) to the simmering soup before adding the cheese.
  • You can use vegetable broth for a vegetarian option, but omit the bacon.
