1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 cup uncooked white rice
2 cups chicken broth
1 cup broccoli florets
1 can (10.5 ounces) condensed cream of chicken soup
1 cup shredded cheddar cheese
1/2 cup milk
1/4 teaspoon black pepper
Instructions
Preheat your oven to 375°F (190°C).
Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken and cook until browned on all sides.
Stir in the uncooked rice and chicken broth. Bring to a boil.
Reduce heat to low, cover, and simmer for 10 minutes.
Stir in the broccoli florets, cream of chicken soup, shredded cheddar cheese, milk, and black pepper.
Cover the skillet and bake for 20-25 minutes, or until the rice is cooked and the casserole is bubbly.
Let it stand for 5 minutes before serving.
Notes
For extra flavor, you can add a pinch of garlic powder or onion powder with the pepper.
If you prefer a richer sauce, use whole milk.
