  • 1 pound breakfast sausage, casings removed
  • 4 large eggs
  • 1/4 cup milk
  • Salt and freshly ground black pepper to taste
  • 8 (10-inch) flour tortillas
  • 2 cups shredded cheddar cheese
  • Optional toppings: salsa, sour cream, avocado

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add sausage and cook, breaking it up with a spoon, until browned and cooked through. Drain off any excess grease.
  2. While the sausage is cooking, whisk together eggs, milk, salt, and pepper in a bowl.
  3. Pour the egg mixture into the skillet with the sausage. Cook, stirring occasionally, until the eggs are set.
  4. Warm the tortillas according to package directions.
  5. Spoon the sausage and egg mixture into the center of each tortilla.
  6. Top with shredded cheese.
  7. Fold in the sides of the tortillas and then roll them up tightly to form burritos.
  8. Serve immediately with your favorite toppings, or wrap them in foil for a grab-and-go breakfast.

  • For a spicier kick, add a pinch of red pepper flakes to the sausage while cooking.
