  • 1/4 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour

  • 4 cups fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C). Grease and flour an 8×8 inch baking pan.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the vanilla extract.
  4. In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined to form a dough.
  5. Press about two-thirds of the dough evenly into the bottom of the prepared baking pan.
  6. In a medium bowl, gently toss the blueberries with the granulated sugar, cornstarch, lemon juice, and cinnamon until evenly coated.
  7. Spread the blueberry mixture evenly over the dough in the pan.
  8. Crumble the remaining one-third of the dough evenly over the blueberry filling.
  9. Bake for 35-45 minutes, or until the topping is golden brown and the filling is bubbly.
  10. Let the bars cool completely in the pan on a wire rack before cutting into squares.
