Enjoy a rustic BLT Galette, a delightful pastry bursting with classic bacon, lettuce, and tomato flavors. This easy-to-make galette uses a shortcut pie crust for a fuss-free, delicious meal.

  • 1 shortcut pie crust
  • 1 tablespoon olive oil
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 cup cherry tomatoes, halved
  • 4 ounces bacon, cooked and crumbled
  • 1/4 cup shredded lettuce
  • 1/4 cup shredded cheddar cheese
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the pie crust on a lightly floured surface into a 12-inch circle.
  3. Transfer the crust to a baking sheet lined with parchment paper.
  4. In a small bowl, whisk together the mayonnaise, Dijon mustard, black pepper, and salt.
  5. Spread the mayonnaise mixture evenly over the pie crust, leaving a 2-inch border.
  6. Arrange the halved cherry tomatoes over the mayonnaise mixture.
  7. Sprinkle the crumbled bacon and shredded cheddar cheese over the tomatoes.
  8. Fold the 2-inch border of the pie crust up and over the filling, pleating as you go to create a rustic edge.
  9. Brush the folded crust with the beaten egg for an egg wash.
  10. Bake for 25-30 minutes, or until the crust is golden brown and the filling is bubbly.
  11. Let the galette cool slightly before topping with shredded lettuce.
  12. Slice and serve warm.

  • For an even more delicious galette, try using thick-cut bacon.
  • If you don’t have cherry tomatoes, you can use one large tomato, thinly sliced.
