2 cups grated zucchini (from about 2 medium zucchinis)
1 cup creamy peanut butter
1/2 cup melted unsalted butter
1/2 cup packed light brown sugar
1/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup chocolate chips
Instructions
Preheat your oven to 375°F (190°C). Grease or line a 12-cup muffin tin.
In a blender, combine the grated zucchini, peanut butter, melted butter, brown sugar, granulated sugar, eggs, and vanilla extract. Blend until smooth and well combined.
In a large bowl, whisk together the flour, baking soda, baking powder, and salt.
Pour the wet ingredients from the blender into the bowl with the dry ingredients. Stir until just combined. Do not overmix.
Gently fold in the chocolate chips.
Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
You can grate the zucchini using the large holes of a box grater.
For extra flavor, you can add a pinch of cinnamon to the dry ingredients.
These muffins freeze well. Store them in an airtight container for up to 3 months.
