2 cups fresh black raspberries
1 cup granulated sugar
1/2 cup water
2 cups heavy cream
1 teaspoon vanilla extract
Pinch of salt
Instructions
Combine black raspberries, 1/2 cup sugar, and water in a saucepan. Bring to a simmer over medium heat, stirring until sugar dissolves and raspberries soften.
Remove from heat and let cool. Mash the berries with a fork or potato masher.
Strain the raspberry mixture through a fine-mesh sieve to remove seeds, pressing on the solids to extract as much liquid as possible. Discard the seeds.
In a large bowl, whisk together the heavy cream, remaining 1/2 cup sugar, vanilla extract, and salt until sugar dissolves.
Stir in the strained raspberry puree.
Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
Transfer the ice cream to an airtight container and freeze for at least 4 hours, or until firm.
Notes
For a richer flavor, use ripe black raspberries.
Adjust sugar to your preference.
You can add a tablespoon of lemon juice to brighten the flavor.
