1 (15-ounce) can black beans, rinsed and drained
1/2 cup breadcrumbs
1/4 cup finely chopped onion
1/4 cup finely chopped bell pepper
1 egg, beaten
1 teaspoon chili powder
1/2 teaspoon cumin
Salt and pepper to taste
1 tablespoon olive oil
1 large onion, sliced
1/4 cup sliced avocado
1 tablespoon lime juice
1 clove garlic, minced

Instructions
In a medium bowl, mash the black beans with a fork until mostly mashed.
Add breadcrumbs, chopped onion, chopped bell pepper, beaten egg, chili powder, cumin, salt, and pepper. Mix well.
Form the mixture into two patties.
Heat olive oil in a skillet over medium heat.
Add the sliced onion and cook until softened and lightly browned, about 5-7 minutes. Remove from skillet and set aside.
Add the black bean patties to the same skillet and cook for 4-5 minutes per side, until heated through and browned.
While the burgers cook, prepare the guacamole: Mash avocado with lime juice, minced garlic, salt, and pepper.
Serve the black bean burgers topped with griddled onions and guacamole.
Notes
For a firmer burger, add more breadcrumbs.
You can also bake the burgers at 375°F (190°C) for 20-25 minutes, flipping halfway through.
Add a pinch of cayenne pepper to the burger mixture for extra heat.
