1.5 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
1 tablespoon cornstarch
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup orange juice
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon honey
1 teaspoon grated fresh ginger
1 clove garlic, minced
1 tablespoon olive oil
Sesame seeds, for garnish
Green onions, sliced, for garnish
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a medium bowl, toss the chicken pieces with cornstarch, salt, and pepper.
In a small bowl, whisk together the orange juice, soy sauce, rice vinegar, honey, ginger, and garlic.
Arrange the seasoned chicken in a single layer on the prepared baking sheet.
Bake for 15-20 minutes, or until the chicken is cooked through and lightly browned.
While the chicken is baking, heat the olive oil in a small saucepan over medium heat. Pour in the orange sauce mixture. Bring to a simmer and cook for 3-5 minutes, stirring occasionally, until the sauce has thickened slightly.
Once the chicken is done baking, pour the sauce over the chicken on the baking sheet and toss to coat.
Return the baking sheet to the oven for another 2-3 minutes to allow the sauce to caramelize slightly.
Garnish with sesame seeds and sliced green onions before serving.
Notes
For a spicier kick, add a pinch of red pepper flakes to the sauce.
You can substitute chicken breast for chicken thighs, but adjust the baking time as needed.
Serve with your favorite rice or steamed vegetables.
