1.5 lbs beef sirloin, thinly sliced
1 tbsp olive oil
2 tbsp butter
1 large onion, chopped
8 oz mushrooms, sliced
2 cloves garlic, minced
1/4 cup all-purpose flour
2 cups beef broth
1 cup sour cream
1 tbsp Dijon mustard
Salt and pepper to taste
Cooked egg noodles, for serving
Instructions
Season beef slices with salt and pepper.
Heat olive oil and butter in a large skillet over medium-high heat.
Add beef and cook until browned, then remove from skillet.
Add onion to the skillet and cook until softened, about 5 minutes.
Add mushrooms and cook until browned, about 5-7 minutes.
Stir in garlic and cook for 1 minute until fragrant.
Sprinkle flour over the mushroom and onion mixture and stir to coat. Cook for 1 minute.
Gradually whisk in beef broth until smooth. Bring to a simmer and cook, stirring, until thickened.
Stir in sour cream and Dijon mustard. Heat through, but do not boil.
Return beef to the skillet and stir to combine.
Season with salt and pepper to taste.
Serve immediately over cooked egg noodles.
Notes
For extra flavor, you can add a splash of Worcestershire sauce to the sauce.
If you don’t have sour cream, you can use plain Greek yogurt for a similar tang.
Ensure the heat is low when adding sour cream to prevent curdling.
