Beef Stroganoff (Mushroom Sauce)

A classic Beef Stroganoff recipe with tender beef strips and mushrooms in a rich, creamy sour cream sauce, perfect served over noodles.

Ingredients

  • 1.5 lbs beef sirloin, thinly sliced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 large onion, chopped
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1.5 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 cup sour cream
  • Salt and black pepper to taste
  • 12 oz egg noodles, cooked

Instructions

  1. Heat olive oil and butter in a large skillet over medium-high heat.
  2. Add beef and cook until browned. Remove beef from skillet and set aside.
  3. Add onion to the skillet and cook until softened, about 5 minutes.
  4. Add mushrooms and garlic, and cook until mushrooms are browned, about 5-7 minutes.
  5. Pour in beef broth and Worcestershire sauce. Bring to a simmer and cook for 5 minutes.
  6. Stir in Dijon mustard.
  7. Reduce heat to low and stir in sour cream until combined and heated through. Do not boil.
  8. Return beef to the skillet and season with salt and pepper.
  9. Serve immediately over cooked egg noodles.

Notes

  • For extra tender beef, you can marinate it in a little soy sauce and cornstarch before cooking.
  • If you don’t have sour cream, plain Greek yogurt can be used as a substitute.
  • Add a splash of white wine to the sauce before adding the broth for an extra layer of flavor.
