Basil Fried Rice

Elevate simple fried rice with fresh basil, ginger, chiles, and crispy shallots. This one-skillet dish is perfect for a weeknight dinner.

  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1-2 red chilies, thinly sliced (adjust to taste)
  • 1 cup cooked day-old rice
  • 1/4 cup chopped fresh basil
  • 1 tablespoon soy sauce
  • 1 teaspoon fish sauce
  • 1/2 teaspoon sugar
  • Crispy fried shallots for garnish

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add minced garlic, grated ginger, and sliced chilies to the skillet. Stir-fry for 1 minute until fragrant.
  3. Add the cooked day-old rice to the skillet. Break up any clumps with your spatula.
  4. Stir in the chopped fresh basil, soy sauce, fish sauce, and sugar.
  5. Continue to stir-fry for 3-5 minutes, ensuring all ingredients are well combined and the rice is heated through.
  6. Remove from heat.
  7. Serve immediately, garnished with crispy fried shallots.

Notes

  • Day-old rice works best for fried rice as it is drier and prevents the dish from becoming mushy.
  • Adjust the amount of chili based on your preferred spice level.
  • For added protein, you can scramble an egg into the rice or add cooked chicken, shrimp, or tofu.
