  • 2 large sweet potatoes, scrubbed
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the Aioli:
  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • Pinch of black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Cut the sweet potatoes into uniform fry shapes, about 1/4-inch thick.
  3. In a large bowl, toss the sweet potato fries with olive oil, paprika, garlic powder, salt, and pepper until evenly coated.
  4. Spread the fries in a single layer on the prepared baking sheet.
  5. Bake for 20-25 minutes, flipping halfway through, until the fries are tender and lightly browned.
  6. While the fries are baking, prepare the aioli. In a small bowl, mix together the mayonnaise, minced garlic, lemon juice, salt, and pepper.
  7. Serve the baked sweet potato fries hot with the aioli for dipping.

Notes

  • For crispier fries, ensure the sweet potatoes are cut into uniform sizes and not overcrowded on the baking sheet.
  • You can add other spices to the fries like cayenne pepper for a bit of heat.
  • The aioli can be made ahead of time and stored in the refrigerator.
